Happy National Blueberry Popover Day!!!
What a better way to spend your day than celebrating National Blueberry Popover Day? Popovers are airy rolls that puff up when baked. They are light and crispy on the outside while the insides are warm and often hollow. They can be filled with custards, creams, and fruits for a sweet treat, especially blueberries. If you do not have time to make your popover from scratch, another option is to visit your favorite bakery and surprise your friend or neighbor with a yummy treat!

-Preheat oven to 450*F. In a large bowl, add one cup of milk, 2 large eggs, and 1 tbsp melted unsalted butter with a whisk until combined. Add one cup flour, salt, lemon zest and juice from one lemon, whisking until slightly frothy.
-Place the popover tin in the oven for a couple of minutes to warm. After removing from the oven, pour the remaining 1 tbsp of melted unsalted butter evenly among the 6 popover cups. Then fill up each cup halfway with the batter. Top each cup evenly with blueberries.
Bake popovers for 15 minutes at 450*F and then reduce heat to 350*F and bake another 15 minutes, or until popovers are well browned.
**Very important not to open the oven while baking or your popovers will deflate.**
Turn popovers onto a rack and slit to let steam escape. Serve immediately.
